It seems as if the world is being hit by many storms. I’m sure you’ve all heard people expressing on social media and in person, they are living in fear and uncertainty of what will come. I’ve also seen many people coming together, reaching out in sometimes unintentional ways, sharing extra, and opening up a space for us all to come together. That is what we need more of. For me, I fit in with the people who feel uncertain and helpless. Not knowing what to do next, when our next race will be, or if we will even race this year? Wondering, what are we training for and when? Of course, all we can physically do is our part in being responsible and keeping distance, but we can do much more than that. I’ve been trying to find some perspective. My perspective comes from being back in my hometown, revisiting places which are close to my heart, taking care of myself mentally and physically, training, and recovering as best as I absolutely can. To be ready. To be ready to race when the time comes, but also to be ready to adapt, to support, to make smart decisions, and lift my community up when they need it most. I feel incredibly grateful and privileged in times like these to have the ability to return to my hometown, off the beaten path, surrounded by the people I care for the most. I think it’s become quite evident that we are all in this together so lets embrace it, lets keep sharing, lets keep communicating, we all need each other. I’ve been wanting to share more about my personal self on here for a while, so here’s a perfect opportunity. I’ve posted some recipes I’ve been loving below. Ride food, and some miscellaneous things. Follow along if you’re interested, much love! Peanut Butter-Oat Ride Balls ½ cup peanut butter (or any other nut/seed butter you like) 1 ½ cup rolled oats ¼ cup maple syrup or honey A couple pinches of cinnamon Salt Add ins: Any nuts or seeds of your choice! Chia, flax seed, hemp, almonds, walnuts, etc. My favorite: Handful of chocolate chips, walnuts, raisins, ~2 T chia seeds Mix everything together, form into balls and keep in the fridge. Pandemic Chili:
A new one, Cole and I made it up while we were self-quarantining, limited resources, some random vegetables but turned out soo good! Also highly adaptable to whatever you got lying around! 1 onion 1 large sweet potato ½ large turnip 2 cups black beans ½ lb ground beef 1 can diced tomatoes A few leaves of kale 3 cloves of garlic Salt Seasonings: Chili powder, cumin, mustard seed, black pepper, and anything else you think would be good :P Dice up onion, garlic, turnip, and sweet potato. Sauté until sweet potato and turnip are soft, add in ground beef, spices, cook until meat is almost done. Add everything else and simmer for 10 minutes or until everything looks cooked together.
